After all those Cakes I posted and all the Christmas treats we all had in December, Its time to come back to our healthy eating habits now.
I, for one am starting my new year goals to get more healthy, active and strong through food, exercise and more importantly Positive mindset – I can do it and I can make time for it.
I used to think about ‘How to stick to Health & fitness?’ or Make health goals come new year. But this year, I am going with mantra – “Make systems for health not Goals”.
What does that mean? Instead of thinking of goals in terms of losing pounds/kgs, I want to focus on the systems.
- To be hydrated enough(8-10 cups of water every day),
- Mindful snacking(eating healthy and nourishing food),
- Go out of box in my food prep(include more veggies and seafood in my diet),
- Meditate (Its showing very good results for me even with 5 min guided meditation).
- Discipline and Focus in my work (My most energy needed task)
Having all these points/ideas to work on, I am bringing more wholesome and healthy food to the blog. Sometimes it might be simple ones which you already know, sometimes its that one ingredient you hate. But I am trying to make system of healthy habits here.
That does not mean there will not be any sweets/treats. Of course what’s fun without treats? There will be deserts here and there. But I want to work more to start being consciously healthy!

Today’s post is about the Brussel sprouts which for some reason got the bad rep that it doesn’t deserve in my humble opinion. I am from India and I didnt grow up eating or even looking at brussels, broccoli, lettuce, collard greens etc. Yes, they are available in major cities in India now. But, not when I was growing up.
The best thing I did is to get weekly food basket subscription from my local farm which is like 5 minutes away from my home. I am enjoying the the foods which I never even tried before. Not that I didnt see them before. But I never bothered to even buy them in supermarkets before.
One of the veggies I now love is Brussel sprouts. Its on my weekly grocery list in winters for sure. Love the taste of freshly roasted veggies and brussel sprouts will not disappoint! Just try them or given them a second chance. That’s all I ask.
The recipe is simple enough! Roast the Brussel sprouts with Olive oil, garlic and salt. Mix them up with cranberries and sliced almonds. That’s it. Nothing fancy and not much work. Just, don’t overcrowd the brussels in the pan while baking.
This works as a good appetizer or lunch salad perfectly. Pair it with a piece of salmon or bread if you would like to amp it up.
Brussel sprouts are best enjoyed hot or warm! Bon Apetit!
Healthy Brussel Sprout Cranberry Almond Salad
Easy Roasted Brussel sprouts with Cranberries and Almonds
Ingredients
- 2 pounds Brussel sprouts
- 3 tbsp Extra virgin Olive Oil
- 1/2 tsp Kosher Salt
- 1/2 cup Cranberries
- 1/2 cup Sliced Almonds
Directions
- Preheat oven to 425 degree F. Line a baking pan with aluminum foil or parchment paper(Cleanup is easy this way).
- Wash, dry the Brussel sprouts. Cut them into half’s.
- Take them on the baking pan. Add Olive oil and salt. Use your hands to mix them well. Place them on flat side down.
- Bake for 20-25 mins turning them half way through. Make sure the sprouts are soft and lightly browned on the sides.
- Once out of the oven, toss almond slices and mix it. Leave it for 5 mins and then add cranberries.
- Brussel sprouts are best enjoyed hot or warm! Enjoy!
- Notes
- Almonds can be replaced with walnuts
- Don’t overcrowd the brussels while baking.

Ever since I was a kid I loved brussel sprouts and couldn’t understand why people thought they were bitter. My mom would halve them, add some lemon juice and vinegar, a dash of salt and pepper and braise them lightly in a skillet.
Since then I’ve added some red wine instead of vinegar; too sweet a wine detracts from the sprouts flavors, although some of my friends like it; the sweeter, the better. I prefer the taste with Merlot or Pinot Noir.
If one likes them sweet, you can always add molasses or corn syrup, VERY lightly, though! These sweeteners easily completely drown out the flavor; might as well eat green beans! 😉

Wow, that’s a lovely list of options. I don’t drink or use alcohol. So, cant use most of these. But I can definitely try your mom’s recipe next time. In fact, I am planning to use up Brussels tomorrow. Will let you know how it works. Thank you for your wonderful comment.

If you warm the wine before adding most all of the alcohol evaporates and all you will get it the flavor. My family was tea-totaler as well. When she saw my bride (of 31 years 😉 ) adding beer to a lobster pot, her eyes got wide and she said, “Well, c.a., I can’t have any of that lobster!” But when I pointed out that the beer was actually BOILED, there could be zero alcohol left, she tried it and liked it! However, whenever she got a hankering for beer-boiled lobster, she would have someone else buy the beer; she did not want any neighbors seeing her in a liquor store!!! :-D))))

So, I tried the brussels yesterday with some vinegar(first time) with simple salt & pepper along with homemade tomato coup and baked chickpeas. Yumm…..We loved this version too. I wish I could send some pics to you. Thanks again!
