4-ingredient Healthy Coconut-Carrot Bites

Star Ingredients: Carrots, Coconut flakes, Ghee


In many ways than one, I feel we all are connected. Bear with me before I make my point here. I grew up in India and moved to America after getting married. The more I live here in the USA, I realize the customs, traditions, celebrations all kinda same with different names.

I raise this point because right from September to December/January, its more merry time in the form of Indian festivals for us starting with Ganesh Chathurthy, Dasera, Diwali and ends with Sankranthi or Pongal in January.

In America, its merry time too starting with September(School opens- fall starts), Halloween, Thanksgiving, Christmas and new year celebrations. Sometimes they even jump to Valentines day by mid of January. So, you see we all celebrate things in the same time but with different names. Right?

Even if you are not convinced, I want to just go along with that. Come along please!!

On that note, I want to bring to you this simple yet delicious and healthy Carrot bites made with just 3 ingredients.

These carrot bites are more simplified version of carrot Halwa with subtle sweetness. Carrots, Ghee and condensed milk are all that you need. But I added nuts, raisins and cardamom powder to give that Indian festive flare. And if you want to take a step further, roll them in coconut flakes to give it more taste and looks like I did.

With Navratri & Dasera days running till Monday (Oct 7), this will be good item to offer to God. Enjoy !!



3-ingredient Healthy Carrot Bites

  • Servings: 6
  • Difficulty: Easy
  • Print

Simple yet delicious and healthy Carrot bites made with just 4 ingredients.


  • 4 Carrots – peeled and thinly grated
  • 3 tbsp Condensed Milk
  • 2 tbsp Ghee
  • 2 tbsp Coconut flakes
  • 1/2 tsp Cardamom powder (Optional)
  • 2 Almonds – Sliced or Slivered (Optional)
  • 1 tbsp raisins (Optional)


  1. In a Wide hot pan, add ghee. Once it melts, add the grated carrots and fry it on low flame until the rawness is gone and carrot becomes dry(but not burnt). It took me 10 mins on medium flame.
  2. Add the condensed milk and keep stirring until the liquid is completely absorbed – around 5 to 7 mins. Turn off the flame and leave the mixture for 2-3 mins covered.
  3. That’s it, the mixture can be rolled into bites/balls. I added nuts, raisins, cardamom powder before making them into balls.
  4. Once the mixture is warm, roll them in 1-2 tbsp coconut flakes and they are ready.
  5. Enjoy!!
